Marinated Grilled Salmon Fillets


Per 4-6 oz portion, use:
3 TBS of Soy Sauce  
3 TBS of Dry Vermouth  
2 TBS of Dark Brown Sugar  
1 TBS of Cracked Black Pepper  
1 tsp of sesame oil  
1/4 tsp of Cayenne Pepper  
** Marinade can be doubled for larger amounts of fish**  


Mix ingredients in zip lock bag and marinate salmon fillets for 1-3 hrs (in a refrigerator or cool area if using immediately)
Grill and baste with marinade - brown sugar will carmelize, and form a nice, crunchy crust. Serve hot or chill and serve cold as an appetizer  
Works with all Salmon - also works great with shrimp, just marinate longer
