"Magic" Grilled Wild Salmon


1 or 1.5 LBS Wild Salmon Fillets with Skin On
3 Tablespoons White Wine  
Juice from 1 lime (or 1 lemon)
1/4 Cup Olive Oil  
Your Favorite Salmon Seasoning (I use Paul Prudhomme's MAGIC Salmon Seasoning)  


Remove salmon from refrigerator a half hour before grilling  
Preheat grill to med/high  
Whisk together the white wine, lemon, and olive oil (this thickens the mixture.)  Baste non-skin sides of salmon filets with oil mixture, and sprinkle generously with seasoning. Place basted side down on grill  
Grill 5-7 minutes (depending on thickness) in a covered grill. Open grill back up, baste and season skin side then turn filets over using 2 spatulas. Baste again using the remaining oil mixture and more seasoning to taste  
Cover and grill skin side down for another 5-7 minutes, or longer if needed.
