Tuna Lollipops 16 flavored skewers (coconut lime) 24 oz tuna (four 6 oz steaks, cut into 4 pieces) 1 can coconut milk ½ cup sweetened coconut cream 1½ tsp cinnamon 2 tbsp soy sauce 8-10 peppercorns a splash of rum salt & pepper chopped chives for garnish Directions: 1 - Insert one skewer into each piece of tuna 2 - Make a glaze by placing coconut milk, cinnamon, soy sauce, rum, peppercorns & coconut cream into a saucepan. Reduce to half (a thick syrup consistency) and add more cinnamon, soy sauce, or rum as needed 3 - Heat a saute pan to hot - but not smoking! Season the tuna lollipops with salt and pepper and sear about 1 minute on each side. Pour reduced glaze over tuna & sear to medium rare Sprinkle with chopped chives and serve! Other Cooking Instructions: Stovetop: Whether on the grill or in a pan we like to coat Ahi Tuna with olive oil, searing the tuna steak over medium high heat, approximately 1 minute on each side. Or, if you prefer you can follow the recipes below.
Baked: Preheat at 350°F, cook 30 minutes from frozen, cook 20 minutes fully defrosted. Cook to an internal temperature of 150°F. Use a thermometer for accuracy.
Broil: Preheat broiler. Place steaks on greased unheated rack of broiler pan. (If desired, brush with olive oil). Broil 4 inches from heat for 4-6 minutes (no need to turn) until fish just flakes with a fork, brushing occasionally with remaining mixture.
Grilled: Combine olive oil, basil, vinegar, oregano, garlic, salt and pepper. Marinate 4 steaks 30 minutes; sear the tuna steak, over medium-high heat, approximately 1 minute on each side. |
