Try some of these favorites accompaniments: Water crackers; thinly sliced red onion; cream cheese; capers, thinly sliced apples, pears or star fruit; a sharp cheddar cheese; sweet mustard; fruit salsa; toast points; or, slices of your favorite artisan bread. With Nova style smoked salmon, soy sauce and wasabi also make a great accompaniment. Put on the finishing touch with one of these simple ideas: Top fillet with thin shavings of lemon and lime peel; circle fillet with hollowed out, cream cheese filled cherry tomatoes; sprinkle fillet with finely chopped fresh dill; set smoked salmon on a bed of fresh spinach or arugala leaves; use piping bag to place small dollops of crème’ freche down middle of fillet; place top of a fresh-cut rose or tulip at small end of fillet. Toss with pasta & either an Alfredo sauce or olive oil. 3. Make a smoked salmon taco with lettuce, tomatoes, salsa & onions. 4. Mix with cream cheese, a dash of Tabasco, lemon juice, salt & pepper to make a smoked salmon spread. 5. Cook until hard, chop into small cubes and use as croutons. 6. Toss into scrambled eggs. 7. Add to a clam chowder, to make a smoky Fisherman’s Chowder. 8. Toss into a Caesar Salad. 9. Spread a soft cheese, such as Borsin, over French bread. Top with crumbled smoked salmon, red onions & capers. Heat & serve. 10. Add to your favorite stuffing recipe, & use to stuff mushroom caps, cherry tomatoes or white fish fillets.
